Bernie Engels, owner of Knife N' Sharp LLC, with some "food for thought" when it comes to knives:
In our opinion, there are only two kinds of knives.  Sharp knives, and dull knives.  A person can own a $300 knife that has been abused, and is no longer good for anything but a paper weight.  Another person may own a $10 knife that has been taken care of, which will cleanly slice through whatever is put in front of it.  So what do we mean by a knife that has been "taken care of?"  Read on...
  1. A knife that has never seen the inside of a dishwasher, or has been left to soak in dishwater in the sink.
  2. A knife that has never been stored in a drawer with other silverware banging up against it.
  3. A knife that has never been used as a screw driver, pry bar, or dagger.
  4. A knife that has never been used on any surface other than a  cutting board.
  5. A knife that has been honed with a steel on a regular basis.
