Bernie Engels, owner of Knife N' Sharp LLC, with some "food for thought" when it comes to knives:
  There are  two kinds of knives... sharp knives, and dull knives.  
Someone may own a $300 knife, but if that knife is dull, it is no longer good for anything but a paper weight.  Another person may own a $10 knife that has been taken care of, which will cleanly slice through whatever food item put in front of it.  
   So what do we mean by a knife that has been "taken care of?" 
  1. A knife that has never seen the inside of a dishwasher, or has been left to soak in dishwater in the sink.
  2. A knife that has never been stored in a drawer with other silverware banging up against it.
  3. A knife that has never been used as a screw driver, pry bar, or dagger.
  4. A knife that has never been used on any surface other than a  wood or plastic cutting board.
  5. A knife that has been touched up with a honing rod on a regular basis.

  If these basic rules are followed, a knife should last for many years.
